Does this integration capture email addresses?

Mailchimp needs an email address to create a contact. When the integration is live, you'll configure how to collect or generate this : typically through the DM conversation or a link to a landing page where the user provides their email.

Can I tag Instagram leads differently based on the keyword they used?

Yes. You can map specific keywords to Mailchimp tags. For example, people who comment "GUIDE" get tagged "lead-magnet," while people who comment "PRICE" get tagged "pricing-interest."
